Description
When father and son, Roger and Hayes Kelman purchased the
historic Dodge City Municipal Building in 2014, their area of expertise
included farming. As a fifth generation farmer, Hayes has always looked for
original means of vertical integration and new uses for the grain he and his
team grows. Now, Boot Hill Distillery exclusively uses grain grown on Kelman
Farms, 50 miles west of the Distillery, to produce its spirits.
After
harvest, the wheat, corn, and other grains are delivered to the Distillery
where we mill, mash, ferment, and distill on site in our historic building. We
then transport aged spirits to our rickhouse to rest.
The
building's location atop the original Boot Hill Cemetery weaves past to
present, and today, a different type of spirit inhabits Boot Hill.
