Saucy Beef and Truffle Orzo featuring Grandma Hoerner's and Oatie Beef

Looking for a deliciously-easy beef dish for your family? Check out one of the latest creations by Chef Alli featured at the 2015 Kansas Sampler Festival. This delicious dish includes Kansas-made Grandma Hoerner's Mediterranean Truffle Sauce and Oatie Beef.  

Ingredients:

1-2 Tbs. olive oil
½ lb. sliced baby portobello mushrooms (or substitute button mushrooms)
1 lb. orzo pasta
1-2 cups beef broth
16 oz., Grandma Hoerner's Mediterranean Truffle Sauce
1 lb. grilled beef steak from Oatie Beef, thinly sliced, across the grain, on the bias, warm
Kosher salt and freshly ground black pepper, to taste
1-2 Tbs. chopped flat leaf parsley
Grated Parmesan, for garnishing

In a large skillet over medium high heat, heat oil. When oil is nicely hot, add orzo and cook, stirring often, for 3-4 minutes.

Add mushrooms and sauté with orzo, cooking an additional 1-2 minutes. Add 1 cup broth along with Grandma Hoerner’s Mediterranean Truffle Sauce to pan, stirring to combine.

Add remaining 1 cup broth to skillet, stirring and cooking until orzo is al dente; season to taste with salt and pepper.

Stir in cooked Oatie Beef and top orzo with Parmesan to serve.
