Catawba Wine Spritzers, Peach Wine Slushies, & Tropical Summer Sangria
Catawba Wine Spritzers
1 bottle Smoky Hill Vineyards, Pink Catawba
Fresh strawberries, stemmed and halves
Lemon slices
Fresh mint leaves
Club Soda
To prepare spritzers, place 2-3 strawberries into each wine glass with a lemon slice; muddle until juicy.
Add desired amount of wine, then top with club soda. Add ice, garnish with mint and lemon slices; serve at once.
Peach Wine Slushies
1 bottle sweet or semi-sweet white wine (I used Wyldewood Cellars Lady Dulce Sweet)
1 lb. frozen sliced peaches
Sliced fruit, for garnishing
Pour a bit of wine into the blender, add the frozen peaches, then pour in the rest of the wine. Purée mixture until smooth. (If mixture isn't slushy in texture, place into the freezer until more set.) Pour into glasses and garnish with fruit.
Slushies can be made in advance, then defrosted at room temperature for 15-20 minutes. Makes 4 servings, approx. 1 cup each. May substitute 1 lb. of any frozen fruit in this recipe!
Tropical Summer Sangria
1 bottle semi-sweet white wine (I used Somerset Ridge Buffalo White), chilled well
1 cup Malibu rum
1 cup pineapple juice
1/2 cup orange juice
Sliced fresh fruit, frozen if possible, to chill sangria
In a pitcher, combine all ingredients except fresh fruit. Add frozen fruit to pitcher to chill sangria. Serve as desired.
