Neopolitan Cheesecake Brownies Paired with Ad Astra Dessert Wine from Wheat State Wine Co. 

 

Who says a basic brownie mix can't be made to look pretty darn fancy? Good chocolate treats don't have to be complicated. Simply elevate your brownie box mix a bit (see how below), add a cheesecake layer, gooey marshmallows, and a rich chocolate frosting. So easy, so fun! 

 

 

Brownie Layer 

1 Duncan Hines Dark Chocolate Brownie Mix, Made according to package directions, substituting strong coffee for the water, butter  for the oil, and adding a splash of vanilla extract to the batter 

 

Cheesecake Layer 

6 oz. cream cheese, softened 

½ cup sugar

¼ cup butter

1 egg

1 tsp vanilla

a few drops of red food coloring 

 

 

Topping 

3 cups mini marshmallows

 

Chocolate Icing 

1/4 cup unsalted butter, softened 

1/2 cup good-quality semi-sweet chocolate chips, melted 

2 cups powdered sugar

1 tsp vanilla

4 oz. cream cheese, softened 

1-2 Tbs. milk

 

Other

2 oz. drizzle pouch red or pink candy melts 

whipped topping, such as Redi-Whip 

24 fresh strawberries, with stems

Directions:

Preheat oven to 350 degrees F. 

 

Spread the prepared brownie batter into a greased 9x13 pan.

 

In a large mixing bowl, beat the cheesecake ingredients until fluffy; add a few drops of red food coloring, stirring until the mixture is the desired shade of pink that you prefer. Spread the prepared cream cheese mixture carefully over the brownie batter. Bake, uncovered, for 25 minutes on the center oven rack. 

 

When the timer sounds, remove the brownies from the oven; sprinkle evenly with the marshmallows and bake for  an additional 2 minutes. 

 

Meanwhile, in a large mixing bowl, make the icing by beating all ingredients until whipped and smooth. When the brownies have cooled, spread the chocolate frosting over the marshmallow layer; store in the fridge until chilled. (Much easier to slice when chilled.) 

 

When ready to serve, cut the chilled cheesecake brownies into squares; drizzle each one with the warm candy melt mixture, letting the drizzle set up; top each brownie with whipped cream and fresh raspberries.
